Instructions:
Cook the Beef: Heat the olive oil in a large frying pan over medium heat. Add the onion and garlic, and cook until soft. Increase the heat to high, add the ground beef, breaking it up with a spoon, and cook until browned. Stir in the chili powder, cumin, smoked paprika, salt, and pepper. Cook for another 5 minutes, then remove from heat.
Prepare the Salsa: Mix the tomatoes, red onion, jalapeño (if using), lime juice, coriander, and salt in a bowl. Set aside.
Make the Guacamole: Mash the avocados in another bowl. Stir in the lime juice and salt.
Warm the Tortillas: Heat the tortillas in a dry pan, microwave, or oven until warm and slightly charred at the edges.
Assemble the Tacos: Spoon the beef mixture onto the warm tortillas. Top with salsa and a dollop of guacamole. Serve immediately.
